Welcome to the valley of the famous village of Cucugnan in the Aude (which became legendary thanks to Alphonse Daudet's tale "Le Curé de Cucugnan") between the majestic Cathar citadels of Queribus and Peyrepertuse.
A high altitude vineyard
Our vineyard is located at an altitude of between 200 and 500 metres in the Cucugnan valley. 20 hectares of old vines are divided into 39 parcels, spread over a distance of 12 km.
The cool climate of the mountains allows a progressive and optimal ripening of our grapes. They ripen slowly and concentrate the aromas infused with garrigue and maquis, a preserved and colourful environment at the foot of the Château de Quéribus.
Biodynamics allows us to reveal the finest subtleties of our terroir to express the authentic taste of the place.
We prepare our herbal teas and decoctions of nettle, camomile, valerian, to do without chemicals.
Grazing of the vines by sheep in February and March helps to control weed growth, provides manure and is an excellent energy source for the ewes at the end of their pregnancy.
Fermentation starts naturally with the indigenous yeasts. In the cellar, meticulous work is carried out according to the lunar cycles.
In the vineyard and in the cellar, we make every effort to save natural resources. We keep this consistency for the packaging of our bottles by choosing an eco-responsible packaging.
