AVERAGE AGE OF THE VINES : 26 years old
The Roussanne vine is planted on the Termenès terroir between the villages of
Rouffiac-des-Corbières and Montgaillard at an altitude of 450 metres. The soil is
composed of sandstone arenas. It benefits from a Mediterranean climate cooled by
altitude and under a slight Atlantic influence.
WINE MAKING :
Put in the press as soon as it is received. After cold settling, slow fermentation at
17-18°C in an earthenware amphora for about 20 days.
In 710L terracotta amphora for 5 months. Resuspension of the lees
fine every ten days.
BOTTLING : bottling on 29 May 2020 of 1,091 bottles.
GUARD : To be consumed within 1 to 5 years of the vintage (2020 - 2024)
PERCENTAGE ALCOHOL : 13 % VOL
